From the hills to the plain, an extraordinary typical product
Two of the most typical products from this province are, without doubt, Traditional Balsamic Vinegar of Modena PDO and Balsamic Vinegar of Modena PGI, the production of which is limited exclusively to the province of Modena.
Here, the semi-continental climate, with cold winters and hot, humid summers, softened by the nearby Adriatic Sea, favours the development of microorganisms that are essential to the whole process of maturation and ageing.
An excellence tied to the vineyards
Land, climate and earth; earth that possesses unique characteristics and produces grapes with the perfect concentration of sugars and acidity.
For the production of Traditional Balsamic Vinegar of Modena PDO, only grapes that are typical of the zone, including Trebbiano, Ancellotta, Lambrusco, Sauvignon, Sgavetta, Berzemino and Occhio di Gatta, can be used. Fortana, Montuni, Sangiovese and Albana, as well as Trebbiano, Lambrusco and Ancellotta, on the other hand, are the only vine varieties allowed for the production of Balsamic Vinegar of Modena PGI.
