History and founders

Our story of quality and tradition begins in Motta di Cavezzo, in the heart of Emilia Romagna, in the historic location whose name ties it to the land where it was built in 1906: the Motta Cellars.

The story begins

The meeting between Cesare Mazzetti, a pioneering and visionary man whose family had been involved in the world of distillation for six generations, three generations of which were involved in the production of balsamic vinegar, and Marco Bombarda, who inherited his family’s passion for excellence and for the land, gave life to Acetum.

Step by step

Over the years our growth has been constant and relentless, but our desire to respect tradition has also remained constant. At Acetum, ancient production methods are safeguarded alongside cutting-edge facilities that allow us to guarantee the highest standards of quality.

We quickly understood that our “black gold” deserved to be known all over the world, from Europe to new overseas markets, such as Australia and the United States, where we opened an Acetum branch during the early 1990s.

Our exploration has not halted for a moment: from the invention of Blaze®, the first glaze with Balsamic Vinegar of Modena PGI, to more avant-garde pairings; this passion allows us to continue to innovate on the market today. Along the way, we have found and explored new routes, new brands and development lines, such as “Antica Modena”. We have continued to grow, thanks also to the arrival of “Fini” and “MAZZETTI L’Originale” into the group. Then, in 2011, two vinegar producers joined the Acetum family: the Emiliano Romagnolo Vinegar Factory and the Pontiroli Artos Vinegar Factory. Wine vinegar, essential for the production of Balsamic Vinegar of Modena, is now directly monitored and guaranteed by us.


A new start

But, as we all know, the road is never easy, and on 29th May 2012, our progress was halted by a violent earthquake that struck Emilia and caused serious damage to our facilities. We immediately got to work, pulling together. And thus, thanks to these people, who are the true heart of our company, in just a short while a new cellar and unique space emerged from the ruins: Casa Mazzetti.

In the countryside of Modena, between Cavezzo and Motta di Cavezzo, today you will find a company with an annual production of 25 million litres of Balsamic Vinegar of Modena PGI, exported to more than 100 countries, and with a capacity for ageing in casks and vats made from fine woods of 14 million litres. We also boast an exclusive cellar, where we safeguard 5,600 casks of Traditional Balsamic Vinegar of Modena PDO. This is our story; this is Acetum
