Acetum, specialize in manufacturing quality Balsamic Vinegar of Modena Acetum is based in Cavezzo, in the historical building of the Motta Cellars: established in 1906, the cellars were totally restructured to host the vinegar production. The ageing areas, fully rebuilt with barrels and casks of different sizes and types of wood, are at the top of the capacity in the industry: the total volume in ageing is close to two million liter, the volume in stock is over three million, in so placing the company in the highest ranks.

 

Production and markets

Leader on the export markets, currently Acetum is in the highest industry positions for sales, thanks to the quality of its proprietary brands, Acetum and Mazzetti L'Originale.First export to the US market of Mazzetti Balsamic Vinegar dates back to the early 70s, when this product was not even known by Italian consumers, obviously excluding the original area of Modena and Reggio. Since that time, also due to the commercial efforts of local producers, balsamic vinegar of Modena conquered market shares which increased with time, and imposed itself to the attention of consumers all over the world. Acetum is at the top of the industry, with a production representing over 20% of the total production of Consortium Balsamic Vinegar of Modena (year 2001). At the base of the commercial success of Acetum is the care for quality : the whole production is made according ancient recipes, and under the control of a modern in-house laboratory which grants consistency and safety. A continuous study and research on raw materials and production methods is aimed to obtain always better qualities and the highest possible customers' satisfaction. Acetum was the first balsamic vinegar manufacturer to obtain, in Dec.2000, the products certification, which grants their respect of a defined quality, under both a sensory and chemical-physical profile. A high customer's service level, also awarded by the Emilia Romagna Region in 2002, is maintained by adopting a modern and flexible company structure, and with state-of-the art production plants. The most of the production (about 85%) is exported to 40 countries all over the worls, especially with the Mazzetti L'Originale brand, which today is market leader in such important areas as Germany and Australia. Under this point of view, it is noticeable the fact that Acetum developed strict relations with some important Retailing Groups, maturing positive experiences also as a supplier of Private Labels.
